Roasted Garlic and Herb Sweet Potatoes A nutrient-packed alternative to traditional candied yams, this dish is full of flavor without the added sugar.

Ingredients: 

  • 3 medium sweet potatoes, peeled and diced 

  • 2 tablespoons olive oil 

  • 3 cloves garlic, minced 

  • 1 teaspoon dried rosemary 

  • 1 teaspoon dried thyme 

  • Salt and pepper to taste 

  • Optional: Fresh parsley for garnish 

Instructions: 

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. 

  2. Prepare the sweet potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper.

  3. Roast the sweet potatoes: Spread the sweet potatoes in an even layer on the prepared baking sheet. Roast for 25–30 minutes, stirring halfway through, until the potatoes are tender and lightly browned. 

  4. Garnish and serve: Remove from the oven and sprinkle with fresh parsley before serving.
